In a large skillet, sauté onions in the oil. Once translucent, add meat and garlic, cook until meat is cooked thoroughly. Stir in peas, carrots, and thyme. Add balsamic, tomato paste, and red wine, cook for 2 minutes. Add chicken stock, salt and pepper. Simmer for 10 minutes. Place mixture in a greased 9×13” dish. Spoon the mashed potatoes over the top. Bake at 400° for 18-20 minutes to brown the potatoes. Serve warm.
