Balsamic Vinegar

Traditional balsamic vinegar of Modena, Italy, is made from white and sugary Trebbiano grapes grown in the town’s surrounding hills. This traditional vinegar is made from the cooked grape “must” matured by a long, slow process through natural fermentation, followed by progressive concentration by aging in a series of casks made from different types of wood. The fragrance is distinct, complex, and sharp, with unmistakable but pleasant acidity. The flavor is sweet and sour in perfect proportion, varying with the length of aging.

Balsamic vinegar has a very long shelf life and can be stored in a closed container indefinitely. We suggest storing it at room temperature; refrigeration is not required. Exposure to air will not harm the product, but may cause “mothering,” which causes solids to filter out. Some sedimentation is normal, but it will disappear when the bottle is agitated.

It is commonly used in salad dressings, marinades, sauces, gravies, meats, season salad greens, strawberries, peaches and melons, and frozen desserts.

Traditional

Finest grade of aged balsamic vinegar condimento from Modena, Italy is produced in the traditional style. It aged for up to 18 years in chestnut, oak, mulberry and ash barrels. Has a 4 percent acidity, and is exceedingly rich, complex and dense. Pairs beautifully with any of our olive oils for vinaigrettes, glazes or marinades. Also try drizzled over ice cream or with fresh fruits and berries.

Champagne

This balsamic is complex and rich, and owes its depth of flavor to Solera aged dark vinegar from Modena blended with sparkling white French champagne vinegar. With an acidity of 6 percent, it adds a delightful tart kick to vinaigrettes, marinades, sauces.

Espresso

Amazingly complex, with layers of authentic espresso and dark roasted coffee. It makes a fantastic glaze or BBQ base for pork, beef or chicken. Add a shot to an “affogatto float” – a tall mug of vanilla gelato scoops covered with coffee.

Blackberry Ginger

Wonderfully sweet, pleasingly tart with a warm tang of ginger root. Makes a fantastic dressing or marinade, and is exceptional paired with out Persian lime EVOO.

Dark Chocolate

Rich and thick, resounds with the complexity of three different chocolates that is responsible for its depth of flavor. Drizzle over vanilla gelato, mix with fresh berries or add zing to your chicken mole.

Black Cherry

So delicious it is often a kid's favorite, and often a good way to introduce them to balsamic vinegar. Pair with our lemon olive oil.

Cinnamon Pear

This delightful vinegar is spicy and warm, perfect drizzled over fresh fruit or as a dessert topping. It has the unique taste of d’anjou pear, and matches well with many of our sweeter, fruity oils for a delicious marinade or salad dressing.

Tangerine

Made with whole fruit tangerine essence. Tart, versatile, it’s outstanding with summer vegetables, salad greens, fruits like strawberries and melon. Makes an excellent glaze for salmon, or with sweet sour chicken. Pairs well with blood orange EVOO.

Black Mission Fig

This aged fig balsamic vinegar is thick, ripe, and bursting with fig flavor; not too sweet, not to tart, with less “bite” than many vinegars. Perfect with fresh foie gras, sautéed watercress, grilled lamb, or with cantaloupe or honeydew melon sprinkled with minced prosciutto and parmesan cheese.

Blueberry

Our luscious blueberry vinegar is just as amazing over garden salad as it is over fruit salad. When paired with delicate extra virgin oil such as Arbequina, the intense blueberry flavor will shine. Also fantastic with our orange or lemon EVOOs. Pairs well with blue and feta cheeses.

Strawberry

Sweet and tart, strawberry balsamic is the result of adding natural essence. Use as a vinegar, or try as a condiment on dessert dishes such as fruit medleys or super premium vanilla ice cream.

Pomegranate

The intense sweet-tart flavor is a perfect match for hearty meats like lamb and duck. It makes and exciting dressing whisked with your favorite oil, pomegranate seeds, toasted nuts and feta cheese. It adds depth to pan sauces, braised meats or compotes. Drizzle over poached fruits and ice cream for an elegant and easy dessert.

Raspberry

This thick, rich, perfectly balanced balsamic vinegar oozes with the natural flavor of fresh, ripe raspberries. Both sweet and tart, it’s perfect tossed with mixed salad greens and a little feta cheese. Also enjoy paired with one of our flavored oils or as a marinade or glaze for pork or chicken.

Blenheim Apricot

A white balsamic, both sweet and tart with an intensely aromatic aroma of honeysuckle and picked with a faint green tinge. Great with grilled chicken, as a glaze or served with cheese. Pairs fantastically with our roasted almond oil.

Cranberry Pear

This white balsamic is clean, crisp and very tart, and boasts a lovely deep rose blush. It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Use to dress fruit or vegetables salads, as a marinade, a glaze for poultry, with gelatin for a delicious fruit aspic or even in a mixed drink!

Honey Ginger

Honey and ginger play well together in this white balsamic, and bring a gentle, spicy heat that balances perfectly with the moderate, natural acidity of our white balsamic vinegar. Superlative when paired with our Persian lime oil and shines with our Japanese toasted sesame oil! Mix an amazing marinade with the vinegar and toasted sesame oil, garlic flakes and soy sauce.

Ripe Peach

Made with white Trebbiano grapes, this balsamic undergoes the cooking and barrel aging process of balsamic vinegar of Modena, but it’s not caramelized, so it retains its white color. A crisp vinegar with a touch of sweetness. Extremely adaptable, it can be paired with an olive oil to make a light, tart vinaigrette.

Sicilian Lemon

Playfully tart and pleasantly sweet, our Sicilian lemon white balsamic has a perfectly balance acidity and a crisp, lemon flavor and aroma. Fabulous with seafood, in dressings or in mixed drinks. Pairs well with roasted sesame oil for a fantastic salad dressing or marinade!

Maple

This Vermont maple balsamic uses 100 percent pure maple sourced from a small family farm.  Think pancakes, waffles, glazing bacon, pork chops, ice cream, dressings, marinades, cake, fruit, and more.  Pairs well with butter extra virgin olive oil, toasted almond oil, French walnut oil, blood orange extra virgin olive oil, and any of our pure extra virgin olive oils.

Coconut White Balsamic

Wonderfully sweet & tart, this balsamic is infused with all natural coconut flakes. Makes a great dressing for Asian inspired salads when paired with Persian lime EVOO. Drizzle over grilled pineapple, use in marinades or Thai or Indian dishes.

Serrano Pepper Honey Vinegar

Sweet, tart, and spicy artisan vinegar made from 100% honey. Great addition to salsa, ceviche, bloody marys, and shrimp. Use in place of balsamic.

Alfoos Mango

 Our Alfoos Mango White balsamic vinegar pairs exquisitely with our Persian Lime olive oil. Also fantastic with shrimp, scallops, salad, and in salsas for a tropical, sweet-tart twist.  Drizzle over steamed rice to add a beautiful sweet fruitiness.  The Alfoos mango cultivar is considered by many to be one of the best in terms of sweetness, richness and flavor.

Golden Pineapple

 Golden pineapple balsamic is sweet and tart with the heady aroma of fresh ripe pineapple. Try pairing with soy sauce, ginger, and our Garlic Extra Virgin Olive Oil for an amazing marinade. It mixes well with a chicken salad topped with pineapple chunks, and is delicious on grilled shrimp, peppers, and onions. For dessert, try drizzling over fruits and ice cream or simply add to plain yogurt.

Red Apple

A classic red apple with a a hint of tartness, it’s fruitier than most of our aged balsamics. Wonderful marinade; pairs with walnut oil for a delicious salad dressing.
